This recipe was also inspired by a TikTok video, with the addition of eggs to make it brunch! Serves 2 people.
Ingredients:
- Small potatoes – around 400 grams
- Olive oil
- Salt
- Old Bay seasoning
- 1 large can sweetcorn
- Jalapenos (jarred ones are fine)
- 2 tbsp Mayonnaise
- 100 ml Sour cream
- 1 Lime
- Hot sauce (to taste)
- Feta
- Coriander
- 2 Eggs (optional)
Method:
- Pre-heat the oven to 220 degrees C
- Boil the potatoes whole in salted water for 10-12 minutes until fork tender and drain
- Coat the bottom of a baking tray in olive oil, and then use the bottom of a glass or cup to smash the potatoes into the oil
- Season with Old Bay and bake in the oven for around 30 minutes or until golden and crispy
- Meanwhile, mix the sweetcorn with more Old Bay seasoning and chopped jalapenos (to taste) – gently heat in a frying pan
- Make the sauce by whisking together the mayonnaise, sour cream, juice of one lime and a good dollop of hot sauce
- Once the potatoes are cooked, make the dish by layering up the potatoes with some of the sauce (drizzle it over) then the corn, then more sauce
- Top with crumbled feta (or cotija cheese if you can find it!) and coriander leaves
- Fry 2 eggs and plop them on top of your smashed potatoes and street corn for a brunch dish instead of a side dish
