“The French Ski Instructor” burger recipe

Everyone needs a good burger recipe up their sleeves. And this one is a proper grown-up version. Makes 4 burgers.

Ingredients:

  • 2 slices white bread
  • 50 ml milk
  • 500 grams minced beef
  • 1 tsp mustard
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • salt and pepper
  • 1 large onion
  • 1 tsp sugar
  • 25 grams butter
  • 4 tbsp mayonnaise
  • 4 tsp Dijon mustard
  • oil
  • block of reblochon cheese (if you can’t find reblochon or want something milder, try gruyere instead)
  • 4 buns of your choice

Instructions:

  1. Take the crusts off the bread and tear into small pieces. Soak the bread in a little milk for a few minutes until soft – squeeze out any excess milk.
  2. Add the minced beef, mustard, onion and garlic powder and a good grind of salt and pepper to a bowl with the soaked bread. Mix it all together thoroughly with your hands.
  3. Shape into 4 burger patties and set aside.
  4. Finely slice the onion and add it to a frying pan with the butter and sugar. Gently fry the onion until it’s nicely caramelised, and set aside.
  5. Mix the mayonnaise and French mustard together is a small bowl and set aside.
  6. Heat a large frying pan (or your BBQ to around 200 degrees C) and cook your burgers, flipping every couple of minutes, until almost cooked through.
  7. Slice the cheese and top each burger with it – cover just until the cheese starts to melt.
  8. Meanwhile, halve the buns lengthwise and briefly grill the inside of them so they’re slightly charred.
  9. To assemble: spread a layer of the mustard-mayo mix on the bottom half of the bun. Top with a burger with the melted cheese on it, and add a spoonful of the caramelised onion mixture. Top with the other half of the bun and serve immediately.
