Corn fitters recipe

Great for brunch, served with eggs and bacon.

Ingredients:
  • 2 cups self-raising flour flour (or add 2 tsp baking powder to plain flour)
  • 1/2 cup creamed corn (or take half cup of corn, mix with 50 ml of cream, and blend)
  • 1/2 cup corn
  • 1/2 cup milk
  • salt & pepper
  • 3 tsp chopped parsley
  • 1 egg
  • oil
Instructions:
  • De-corn 2 cobs of corn
  • sift flour
  • add salt and pepper
  • crack egg into a bowl, add milk, and mix
  • make a hole in the flour and pour in the eggs and milk mixture
  • add the cream corn and corn kernels to the bowl and mix
  • fry in oil at a medium-high heat, flipping once set, until cooked through and golden brown
