Chilli con carne recipe

Chilli con carne (or just chilli, as Mr Foodie calls it) is a weeknight staple. Serves 4.

Ingredients:

  • oil
  • 1 onion chopped
  • 2 small carrots chopped
  • 2 celery sticks chopped
  • 400 grams minced beef (or half-and-half, or leftover BBQ brisket/beef rib)
  • 2 red chillies (or 2 dried red chillies, or 2 jarred chipotle peppers in adobo sauce) chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon smoked paprika
  • 1 cinnamon stick
  • 1 tablespoon tomato puree
  • 1 glug of red wine
  • 2 tins chopped tomatoes
  • 1 tablespoon cocoa powder
  • 1 teaspoon sugar
  • 1 red bell pepper chopped
  • 1 tin kidney beans
  • salt and pepper

Method:

  1. In a pot large enough to hold all the ingredients, sweat off the vegetables in a tablespoon of vegetable oil.
  2. Add the minced meat to brown it and break it up into small pieces.
  3. Add the spices and tomato puree, and stir to coat everything.
  4. Add the wine and reduce by half.
  5. Add the tinned tomatoes, sugar and cocoa powder and simmer for 20 minutes.
  6. Add the kidney beans and red pepper and simmer for another 30 minutes.
  7. Serve with rice (if you like it British style) or tortilla chips (American style)
  8. If you have any grated cheese, sour cream or coriander leaves, feel free to garnish with these too!
