Asian beef salad recipe

Hearty salad for lunch or dinner. Serves 2.

Ingredients

For the salad:

  • 10 radishes
  • 1/2 a mango
  • 1 head baby romaine lettuce
  • Handful of coriander
  • Handful of mint
  • 2 beef steaks
  • Oil
  • Salt and pepper

For the dressing:

  • Handful of spring onions
  • 1 tsp of raw sugar
  • 50 mls of boiling water
  • Thumb size piece of ginger
  • Splash rice wine vinegar
  • Splash of sesame oil
  • Splash of fish sauce
  • Juice of 1/2 a lime
  • Splash of sweet chili sauce

Instructions

For the dressing:

  1. Dissolve a teaspoon of sugar in boiling water
  2. Chop spring onions and add to sugar water
  3. Finely slice 1/2 a chili pepper and add to sugar water
  4. Finely chop ginger and add to sugar water
  5. Add a splash rice wine vinegar, sesame oil, fish sauce and sweet chilli sauce
  6. Add juice of 1/2 a lime

For the salad:

  • Cut up 1 head baby romaine lettuce
  • Cut mango into thin slices and place on lettuce
  • Thinly slice radishes and place on lettuce
  • Roughly chop a hand full of coriander and handful of mint and place on lettuce
  • Preheat pan with oil
  • Add steaks to pan with salt and pepper
  • Sear on each side for 2 min max
  • Thinly slice steaks and add to salad
