A delicious marinade and cooking method for tri-tip, inspired by something Mr Foodie saw on TikTok. No quantities given – just scale up or down depending on the size of your tri-tip.
Ingredients:
- Cumin seeds
- Dried chillies
- Minced garlic
- Minced ginger
- Turmeric
- Molasses
- Salt
- Tri-tip of beef
Method:
- Toast the dried chillies and cumin seeds
- Bash them up in a pestle & mortar or spice grinder and then combine with the garlic, ginger, turmeric, molasses and salt to form a marinade paste
- Rub the marinade into the beef and cover in the fridge for a few hours
- Bake at 120 degrees C until the internal temperature of the meat reaches 47 degrees C
- Reverse sear the beef in a hot pan with butter and oil until browned on all sides (the meat will rise in temperature to around 52 degrees C)
- Rest for 5 minutes and serve in thick slices
