Nice and spicy, just the way I like it! This recipe is for the oven, but BBQ is even better. Serves 4-6.
INGREDIENTS
- 1 tbsp allspice berries
- 1 tbsp black peppercorns
- 1/2 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1 tbsp fresh thyme leaves
- 4 spring onions, chopped (use the white part and most of the green)
- 1-2 scotch bonnet chillies (or adujama)
- 1 tbsp brown sugar
- 1 tsp salt
- 2 tbsp dark soy sauce
- Juice of 1 lime
- 4 to 6 chicken legs
INSTRUCTIONS
- Cut the chicken legs into thighs and drumsticks (leaving the skin on)
- Blend the marinade and coat the chicken
- Leave in the fridge for 6 hours or overnight
- When ready to cook, pre-heat the oven to 220 degrees C.
- Bake for 25 minutes
- Switch the grill/broiler and char for 10 mins
- Serve with rice and peas
