Chilli con carne (or just chilli, as Mr Foodie calls it) is a weeknight staple. Serves 4.
Ingredients:
- oil
- 1 onion chopped
- 2 small carrots chopped
- 2 celery sticks chopped
- 400 grams minced beef (or half-and-half, or leftover BBQ brisket/beef rib)
- 2 red chillies (or 2 dried red chillies, or 2 jarred chipotle peppers in adobo sauce) chopped
- 1 teaspoon cumin seeds
- 1 teaspoon smoked paprika
- 1 cinnamon stick
- 1 tablespoon tomato puree
- 1 glug of red wine
- 2 tins chopped tomatoes
- 1 tablespoon cocoa powder
- 1 teaspoon sugar
- 1 red bell pepper chopped
- 1 tin kidney beans
- salt and pepper
Method:
- In a pot large enough to hold all the ingredients, sweat off the vegetables in a tablespoon of vegetable oil.
- Add the minced meat to brown it and break it up into small pieces.
- Add the spices and tomato puree, and stir to coat everything.
- Add the wine and reduce by half.
- Add the tinned tomatoes, sugar and cocoa powder and simmer for 20 minutes.
- Add the kidney beans and red pepper and simmer for another 30 minutes.
- Serve with rice (if you like it British style) or tortilla chips (American style)
- If you have any grated cheese, sour cream or coriander leaves, feel free to garnish with these too!
