Bacon and parsnip pasta recipe

Comforting winter pasta dish. Serves 2.

Ingredients:
  • 1 block of bacon
  • 1 medium sized parsnip
  • 1 tbsp olive oil
  • 1 sprig rosemary
  • 4 sprigs thyme
  • 1 clove garlic
  • 50 grams parmesan
  • 200 grams linguine
  • Salt and pepper
Instructions:
  1. Dice the bacon and cut the parsnip into thin slices and place in a large frying pan with the olive oil
  2. Cook on medium-high heat, stirring occasionally
  3. Finely chop the herbs and garlic and add to pan
  4. Continue to stir until bacon and parsnips are browned
  5. Then cover with a lid and reduce heat to low
  6. Meanwhile, boil a large pot of water and add pasta
  7. After pasta is cooked (approx. 10 mins for dried pasta), drain and reserve some of the cooking liquor
  8. Add the pasta and most of the cheese to the pan with the bacon and parsnips
  9. Stir together, adding splashes of the reserved cooking liquor until you’ve created a smooth, creamy sauce
  10. Season to taste
  11. Serve the pasta and top with the rest of the parmesan and a good grind of black pepper
