Comforting winter pasta dish. Serves 2.
Ingredients:
- 1 block of bacon
- 1 medium sized parsnip
- 1 tbsp olive oil
- 1 sprig rosemary
- 4 sprigs thyme
- 1 clove garlic
- 50 grams parmesan
- 200 grams linguine
- Salt and pepper
Instructions:
- Dice the bacon and cut the parsnip into thin slices and place in a large frying pan with the olive oil
- Cook on medium-high heat, stirring occasionally
- Finely chop the herbs and garlic and add to pan
- Continue to stir until bacon and parsnips are browned
- Then cover with a lid and reduce heat to low
- Meanwhile, boil a large pot of water and add pasta
- After pasta is cooked (approx. 10 mins for dried pasta), drain and reserve some of the cooking liquor
- Add the pasta and most of the cheese to the pan with the bacon and parsnips
- Stir together, adding splashes of the reserved cooking liquor until you’ve created a smooth, creamy sauce
- Season to taste
- Serve the pasta and top with the rest of the parmesan and a good grind of black pepper
