Cheap, easy and filling. Serves 2.
Sausage casserole recipe
Ingredients:
- 4 sausages
- 1 onion
- 1 can chopped tomatoes
- 2 cloves garlic
- 2 handfuls of chopped vegetables (carrots, peppers, celery)
- Handful of herbs (thyme, rosemary, and/or bay leaves)
- Sugar
- Salt and pepper
Instructions:
- Brown the sausages at medium heat in large frying pan
- Reduce heat to low and add chopped/sliced onions to pan and cook for 3 min
- Add 1-2 cloves of garlic
- Chop and add 2 handfuls of carrots, clearly, or peppers and cook for 5 min
- (Optional – add some red cooking wine)
- Add 1 can of chopped tomatoes and increase heat
- Add spices/herbs to taste (rosemary, thyme, bay leaves)
- Add a pinch of sugar, and salt and pepper to taste
- Reduce heat, cover and simmer for about 20 mins
