Sausage casserole recipe

Cheap, easy and filling. Serves 2.

Ingredients:
  • 4 sausages
  • 1 onion
  • 1 can chopped tomatoes
  • 2 cloves garlic
  • 2 handfuls of chopped vegetables (carrots, peppers, celery)
  • Handful of herbs (thyme, rosemary, and/or bay leaves)
  • Sugar
  • Salt and pepper
Instructions:
  • Brown the sausages at medium heat in large frying pan
  • Reduce heat to low and add chopped/sliced onions to pan and cook for 3 min
  • Add 1-2 cloves of garlic
  • Chop and add 2 handfuls of carrots, clearly, or peppers and cook for 5 min
  • (Optional – add some red cooking wine)
  • Add 1 can of chopped tomatoes and increase heat
  • Add spices/herbs to taste (rosemary, thyme, bay leaves)
  • Add a pinch of sugar, and salt and pepper to taste
  • Reduce heat, cover and simmer for about 20 mins
