Rack of lamb is always a treat, especially when elevated with this fragrant za’atar crust. Serves 2.
Rack of lamb with za’atar crust recipe
Ingredients:
- 1 tbsp butter (melted)
- 1 tsp za’atar
- 3 tbsp breadcrumbs
- 400 gram rack of lamb (8 ribs)
- Mustard
- Salt and pepper
- Oil
Instructions:
- Pre-heat oven 200 degrees C
- In a bowl, mix the melted butter, za’atar and bread crumbs
- Season the lamb with salt and pepper and rub with a thin layer of oil to prevent it sticking to the pan
- Pre-heat frying pan on high
- Place lamb in hot pan and sear each side for about 1 minute
- Place lamb on baking dish and coat with mustard on top side
- Pack crust on top of mustard layer
- Place in oven for 15 minutes
