Rack of lamb with za’atar crust recipe

Rack of lamb is always a treat, especially when elevated with this fragrant za’atar crust. Serves 2.

Ingredients:
  • 1 tbsp butter (melted)
  • 1 tsp za’atar
  • 3 tbsp breadcrumbs
  • 400 gram rack of lamb (8 ribs)
  • Mustard
  • Salt and pepper
  • Oil
Instructions:
  1. Pre-heat oven 200 degrees C
  2. In a bowl, mix the melted butter, za’atar and bread crumbs
  3. Season the lamb with salt and pepper and rub with a thin layer of oil to prevent it sticking to the pan
  4. Pre-heat frying pan on high
  5. Place lamb in hot pan and sear each side for about 1 minute
  6. Place lamb on baking dish and coat with mustard on top side
  7. Pack crust on top of mustard layer
  8. Place in oven for 15 minutes
