Great for brunch, served with eggs and bacon.
Corn fitters recipe
Ingredients:
- 2 cups self-raising flour flour (or add 2 tsp baking powder to plain flour)
- 1/2 cup creamed corn (or take half cup of corn, mix with 50 ml of cream, and blend)
- 1/2 cup corn
- 1/2 cup milk
- salt & pepper
- 3 tsp chopped parsley
- 1 egg
- oil
Instructions:
- De-corn 2 cobs of corn
- sift flour
- add salt and pepper
- crack egg into a bowl, add milk, and mix
- make a hole in the flour and pour in the eggs and milk mixture
- add the cream corn and corn kernels to the bowl and mix
- fry in oil at a medium-high heat, flipping once set, until cooked through and golden brown
