A couple of months ago, I treated myself to the new cook book by my current favourite chef in London: Plenty by Yotam Ottolenghi. He’s not vegetarian; he just likes vegetables. And Plenty is not a vegetarian cook book; it just doesn’t happen to have any meat recipes in it. If you know what I mean. I like that.
Pumpkins have just popped into season, and what do you know? Mr Ottolenghi has a whole section dedicated to squashes. So I picked the first one – appropriately titled ‘Halloween souffle’ – and tried it out in an enormous glass bowl instead of small ramekins. It was supposed to feed 4-6 people, but we ate the whole thing between two of us.
Ottolenghi encourages you to ‘try something scary today’ – in this case, a will-it-rise-or-won’t-it souffle. I couldn’t agree with him more.
