Given the dearth of decent sandwich shops in the Leidseplein area, lunch at the office is usually a DIY affair. We have a toaster and a microwave, so options are limited; but I find a couple of toasted pitas or bagels filled with something delicious keep the wolf from the door, as they say on that island I come from.
A recent addiction is smoked chicken. Not the wafer thin watery stuff that comes flat-packed, but whole smoked chicken breasts that you can cut yourself into munchable chunks. Its favourite companion, of course, is avocado – but what to bind it together with, to enrich and moisten, to lend a little luxury to your lunch? Mayonnaise would be the obvious choice, but I don’t have any in the office; instead, I tried a dollop of natural yoghurt and a twist of black pepper. The mild sourness of the yoghurt coupled with the richness of the avocado and the salty smokiness of the chicken is tasty, healthy, and even full of helpful bacteria. You can’t say fairer than that!
