Pop-ups: catch them while you can

On a day called Restaurant Day – in which hundreds of amateur chefs are taking to the kitchen and hundreds of non-restaurant venues are opening their doors to the hungry public – it would seem like an opportune moment to write about the culinary phenomenon known as “pop-ups”. Pop-ups have taken Amsterdam by storm in the past year or so, offering “here today, gone tomorrow” exclusivity to guests, plus an opportunity for creative entrepreneurs to showcase their talent. I seem to have at least one a week on my calendar, all of which are food related, but there must be dozens more that either I can’t make or fall off my radar because they’re not about food.

Today there were no less than three to choose from, and I opted for bluesy speakeasy Wink Wink the Blues Away by the Dikke Lepel ladies at a converted garage on Bloemstraat. For €6, I got a plate of nachos heaped with pulled pork, red slaw, black beans and more salsas and sauces than I could shake a lepel at.

Two weeks ago, I was at Café Vief for the Winter Warm-Up: Cosmic Chili edition, by Hilary Eats. €35 netted me three courses of heart-and-toe warming loveliness including the main event: the chili from heaven. One was with smoky minced lamb and chipotle; the other a Mexican-Asian flavour involving white beans, chicken and tonnes of fragrant coriander. The cornbread was possibly the best I’ve ever eaten.

Meanwhile, there are still the pop-up veterans: Salotto Rosso puts on regular events in different locations which all have one thing in common – fantastic Italian wines. My Table pops up regularly at Fraiche, while Kitchen Seductions (also famous for her BaoProject pork buns) makes guest appearances at my favourite cocktail bar, Hiding in Plain Sight. Cheap they ain’t, but the Hawaiian meal with paired cocktails I had in January was some of the best food I’ve eaten in the past year.

I get emails from visitors from out of town asking me if I know of any events for the weekend they’re coming over, but in many cases they ask me so far in advance that I’m probably not yet aware of any. Most events are promoted via word of mouth or Facebook, but how are you supposed to make “friends” with the right people to invite you to these things?

Enter Pop-up Connection, a website that aims to connect the public with pop-up events in Amsterdam, and entrepreneurial types with venues willing to host their events. I won’t pretend I had nothing to do with this site, but neither was it my idea. I’ve helped out with some contacts and web copy, but the rest is down to my partner in crime, Mike. So next time you’re wondering what to get up to of a free evening*, take a look at the events in the pipeline (I can tell you that the next one I know about is an Arabic Soul Food dinner on 25th February by Mezze at Cocktail Hour) and catch a pop-up while you can.
